What to Eat for Breakfast When You’re Sick of Oatmeal, Part II* [Crap in a Cup!]

Mug muffins! Like many trends I am way late on this bandwagon but I’m here to tell you that it’s totally worth jumping on because this stuff is awesome. It may look like crap in a cup but this is one breakfast that is as nutritious as it is tasty. (Note: I did not write “as tasty as it is nutritious” because I am known for eating some pretty foul stuff just because I think it’s good for me. This is not one of those things. It’s genuinely delish.) Plus it only takes 2 minutes to make and cook, is infinitely customizable and makes your house smell like you’ve been really cooking and not just doing the adult version of the Easy Bake Oven (which is essentially what this recipe is)!

Anyhow, I do know that fit and food bloggers have been writing about these babies as long as Drew Barrymore has been making movies (seriously her IMDB page makes my head spin and I think we’re about the same age) but on the off chance that you too have not tried them yet, now’s your chance! To be perfectly clear: I did not invent this recipe – the one I use I got from Heather Eats Almond Butter – nor did I even “tweak” it to make it my own. (If you know me that is disaster waiting to happen.) With that I present to you the mug muffin recipe that is so totally not my idea: (Go check out Heather, she’s amazing.)

One Minute Flax Muffin

Ingredients

  • 1/4 cup ground flax seed
  • 1 egg
  • 1 tsp butter
  • 1 tsp baking powder
  • 1 tsp cocoa powder
  • 1 tsp maple syrup
  • 1/2 tsp vanilla

Directions

  • Combine all ingredients in a large mug and microwave for 50 seconds.  Pops right out – you don’t even need to grease the mug.
  • Put on a pretty dress because everything tastes better in a fun outfit. (Oops, how did that get in there??)

Charlotte’s Notes: This recipe doesn’t taste very sweet which I actually really like but if you prefer your muffins on the sweet side you can always add more sweetener or drizzle syrup over the top or add chocolate chips and whipped cream or whatever. It’s also a wonderfully flexible recipe. I’ve used oat flour and coconut flour instead of the ground flax and while they change the texture a bit they all work fine. You can try omitting the cocoa and adding cinnamon and fruit or even bump up the protein with protein powder.

With 240 calories, 9 grams of fiber, 13 grams of protein and only 3 grams of sugar, it’s a nutrition-packed breakfast. (Or late-night snack, I’m eating one right now.) P.S. I’m only including the nutritional stats for informational purposes because I know people will ask. I am not saying you should only eat 240 calories for breakfast or that this is a complete meal or whatever.

    These sound like so much fun, I really think that my 14 year old son will LOVE to make these and get some experience mixing/making his own breakfast. (that boy gets a big kick out of cracking eggs! LOL)

    Have you had any GI issues with all of that fiber though? I wonder if half flax and half oatmeal might work?

  3. I like to mix some egg beaters with spinach in a mug and nuke it. Shmear a bagel w/Laughing Cow and top each half w/a mug o egg. Delish!

  6. My recipe is similar but with two eggs; I like things eggier (and bigger.)
    If you leave out the cocoa and syrup and cook this in a mini casserole so it comes out flat, it makes a good bread substitute for the gluten intolerant if you want to make a sandwich.

  7. The last time I ate breakfast was…..I can’t remember! Yeah, the most important meal of the day, blah, blah, if you are a child, or work on a farm, milking the cows at 5 AM!

    It’s not that i am anti-break-the-fast, but not eating it has been part of my overall very successful fitness program. Maybe because the SAD breakfast is very unhealthy?

    I have a demitasse of coffee in the AM.

    Breakfast is the hardest meal of the day for me, since I don’t usually feel like eating first thing in the morning. Since I’ve been trying to cut out/reduce wheat & dairy, it’s become even more difficult. I will have to try out this muffin thing – I’d seen them mentioned but have never tried it.

  10. I’m like Dr. J. I can’t remember the last time I ate breakfast. I am not hungry and I drink TONS of water. It’s really the only time of day that I drink water, so its my “healthy trade-off”. I either eat breakfast but only get about 1-2 glasses of water a day or skip it and down 2 liters of water by noon. Of course, then I pee all afternoon, but….

    The dress? Love it. Love the boots more though. Where did you get them?!?!

  11. I love on either overnight chia oats (courtesy of Angela at Oh She Glows) or yogurt, fruit and granola. I can’t get into the mug muffin thing. If I want muffins I just make real muffins instead 🙂

  12. This post came out at the perfect time- I’ve been trying to find a healthier alternative to cereal and milk. I like sweet things for breakfast and eggs/omelettes just don’t work for me.

    I modified a little based on what I actually had in my pantry- I replaced the flax with almond and coconut flour and used unsweetened coconut flakes and cinnamon instead of coconut flour. I liked it so much I had to make another one. 🙂 Thanks Charlotte, I think I’ve found my new go to breakfast!

    But we should think of beyond breakfast here. I plan on doing this at work and enticing coworkers with the smell of fresh baked muffins. Thin ill trade them in for work related favors.

  21. After reading all the comments here I had high hopes for this little flax muffin….boy was I disappointed! That has to be one of the nastiest things I have ever tasted!!! The texture is weird & it has a bizarre after taste, bleurgh!
